The debut episode of Two River TV follows Jon Peters and Peter Hagberg as they set out for a morning of fluke fishing on the Navesink River. With the fluke season just opening a week ago, the river is buzzing with activity. After a successful morning on the water, the duo returns to the outdoor kitchen to cook up a fresh, crispy fluke sandwich.

With birds working the water, Jon and Peter take a few casts for bluefish before switching to fluke. Bluefish put up a strong fight, but their sharp teeth make them tricky to handle, so Peter opts for single hooks on topwater lures rather than treble hooks.
Once they transition to fluke fishing, Peter rigs up with a bucktail jig and Gulp, a tried-and-true bait for catching fluke. Adjusting for wind and tide, they drift along the river until they land an 18-inch keeper fluke, marking a great start to the season.
Cooking a Fresh Fluke Sandwich
Back at the outdoor kitchen, Peter shares his signature fluke sandwich recipe, highlighting the importance of a tangy remoulade sauce and perfectly crispy fillets.
Remoulade Sauce Recipe:
- Mayonnaise & Dijon mustard for a creamy base
- Salted capers for a briny punch
- Fresh chives from the garden
- Lemon zest & juice for brightness
- Creole-style seasoning for a hint of spice
Crispy Fried Fluke:
- Dredge the fillets in all-purpose flour.
- Dip in seasoned egg wash for extra flavor.
- Coat with panko breadcrumbs for maximum crunch.
- Fry until golden brown and serve on a fresh bun.
The result is a perfectly crispy, flavorful sandwich. The avocado and radish add freshness and texture, making this a standout dish for any seafood lover.
